The berry caviar or sorghum comes from the Siberian Sturgeon. The color of this caviar is dark-gray alder and has finer grains than Beluga and Astra caviar. The weight of a Siberian or Soroga fish is usually between 30 and 50 kg, which is about one kg of caviar per fish. It takes about 5-7 years to produce caviar. Because of the good price of this caviar compared to other varieties and the wonderful taste and color of this caviar, berry caviar is the best-selling caviar in Europe and North America at present.
